Ser Mattia I.G.T. Toscana

DESCRIPTION

100% Ciliegiolo, ancient native Tuscan grape variety. Intense color with hints of violet, bright purple. On the palate it is an explosion of red fruits, black cherry and cherry in alcohol, silky tannin on the side that does not preclude its natural softness. Medium length, excellent acidity and freshness. A wine to be enjoyed always, with appetizers based on cured meats and pasta dishes, but even chilled in summer.
The harvest is carried out manually with sorting of the ripest bunches.

A cold maceration of the grapes is carried out for 24 hours in order to extract the intrinsic primary aromas of the grapes. The winemaking takes place at room temperature, taking care not to exceed 22-24° C in order to preserve the fruit and purplish-purple colour typical of Ciliegiolo.
After bottling, the wine is aged for at least 4-6 months before being placed on the market.
